100% Verdil
Whole bunches are stored in a cold room at -10ºC for 15 days. Freezing the pulp breaks the skins, releasing the aromas that give Verdil de Gel its unique character. We stop the fermentation when the wine has reached 8.5% Vol., when the fermentative aromas are at their maximum splendor. The residual sugar in Verdil de gel comes from the natural sugar of the grapes that didn’t get to ferment. 8.5% Vol., pH 3.55, AT 7.2g/L, AR 135g/L.
Vintage 2021. Extremely rainy spring with significant mildew infections that reduced the amount of the harvest by up to 25%. The quality of the verdil from Fontanars dels Alforins was reasonably good.
We harvest our Verdil from Casa Corones with a probable alcohol content of 15º to obtain an aromatic singularity and an optimal sugar level. Manual harvest and bunch selection. Dry vineyard which is 16 years old.
Jose Vicente Gómez Carbajal
Straw yellow color, clean and very pretty. Very expressive nose reminiscent of white flowers, jasmine, orange blossom. Sweet aromas, honey, and cinnamon stand out. A citrus background and delicate notes of apple are also appreciated. Excellent balance, sweet but not cloying wine, fine and very elegant. Good acidity that keeps the wine balancing sugar and alcohol.
The evolution in the bottle brings out the apple that over time will lose prominence in favor of honey, cinnamon and vanilla.
Consume between 2021 and 2023.
